Perfect Pizza On the Grill by Tom A Lingle
If you're wondering if you can cook pizza on the grill, you most certainly can! At medium-high heat on the grill, it is possible. It is even faster and simpler than you might expect. Here is everything you need to get started.
Preparing the Dough
Here you can either create pizza from scratch or utilize prepared pizza dough. Set the grill for medium-high direct heat. Pour some olive oil in a small container for brushing the pizza and greasing the grates. Organize your toppings ahead of time so that when you need them to go on the pizza, they are ready. Some basic toppings are tomato sauce and cheese. Feel free to add any other toppings you want.
Now make a pizza shape out of the dough by pressing it flat with your hands and fingers. Make sure the surface has some flour spread out on it to make pressing and rolling easier. Hold up the ends of the dough with your fingers, allowing it to hang and distend as you work around the ends of the dough. Next, let the dough rest for 5 minutes before pushing out the ends with your fingers the second time around. Your goal is to achieve a good round shape, approximately 12 inches in diameter. Avoid lifting the rim, as it will alter the grilling process.
Grilling
Preheat a clean grill to medium high. If possible keep one side of the equipment cooler. This will allow you to easily transfer the pizza to a cooler area to finish cooking if the bottom part is cooking too fast. Employ heat resistant tongs or spatulas for check the bottom part of the dough. Remember that the dough will cook very fast on the grill. All you will generally need is 1 to 2 minutes pre side. Check for grill marks once the dough begins to pouf up and bubble. See to it that the dough is not charring. There is no exact grilling time for cooking pizza on the grill so you'll have to keep checking on it as it cooks. When applying olive oil, do not put too much, as it can begin to drip into the coals and result in a flare-up. Once the crust is set, turn the dough over. At this point remove the crust from the grill and brush on any sauce or topping.
Adding Toppings
Apply the sauce and toppings and continue to cook the pizza. Once you're done adding the topics, close the grill cover and cook for another 1 to 2 minutes, checking in between for doneness. You know when the grilled pizza's ready when the cheese has melted nicely over and around the pizza toppings. When ready, take the pizza out of the grill right away and transfer to a dish. Let it rest for just a few minutes and serve.
